Ingredients needed:
- ½ lb chicken thighs, cut into bite-size pieces
- 1 cup sofrito, roughly (recipe below)
- 1 cup white rice, uncooked
- 1-2 tablespoon sazon (Organic Eat Loisa Brand is great)
- 1-2 tablespoon adobo seasoning (optional)
- 1-2 teaspoon garlic powder
- 1-2 teaspoon onion powder
- 2 bay leaves
- Salt and pepper to taste
- Puerto Rican Sofrito (makes one cup)
- ½ red pepper
- ½ green pepper
- ½ Spanish onion
- 2-3 cloves garlic
- ½ cubanelle pepper (Italian green pepper)
- 1 bunch cilantro
