Welcome to a new year and a new season of The Chef Series!
We took a couple months off to retool and revamp our Chef Series and this year we are coming back stronger than ever! We have an awesome surprise for you…April, July and October’s Chef Series will be featuring The Nest: A Brunch Joint’s Founder Antonio Cortez Appling and Friends. Being that this is The Nest’s celebratory 10 Year Anniversary Year Antonio wanted to take the reins and sprinkle his own approach towards gastronomy. Antonio will be inviting his friends from the community, colleagues and neighbors to offer insight and inspiration for his menu.
A bit about the Chef…
Antonio has an Afro-Latino background and was born in Ohio…but raised 30 minutes from the Tijuana border in San Diego. He went to college in San Francisco during the mecca of Bay Area food culture in the early 2000’s. He has lived in Los Angeles County for the last 15 years in Long Beach and hopes to bring elements of ALL of these rich traditions to his Chef Series.
What can you expect from The Chef Series?
As always The Chef Series will feature 6 courses highlighting elevated and diverse ingredients. We will have a great DJ providing musical aesthetics and our wonderful ambiance transformed for the event. A great Host will walk you through each course and you’ll have a chance to hear from Antonio offering insight about cooking techniques and inspirations for each dish. If you haven’t been, this is truly a unique evening of education, food and experience.

Antonio will be featuring some of his favorite dishes that he has created from The Long Beach Seafood Roll to a Breakfast Fried Rice and more…
What about the drinks?
All the drinks will be fun and inspired cocktails, mocktails and other libations that directly pair with the food. Antonio is bringing in a guest bartender to curate the menu and helm the bar for the evening… Ten years in the game, and still going strong. Tony Acero hails from Bellflower and wears his city on his jersey proudly. From humble beginnings at Hambones Bar and Grill where he honed his craft, to starting a bar program from the ground up right next door at Fronk’s. He’s been concocting crafty cocktails for a while, and is deeply honored to be able to represent The Nest Chef Series. Aside from his skills behind the pine, he’s a Cal State Long Beach Alumni who just finished writing a collection of short fiction that will be out later this year.
Antonio can’t think of a better way to celebrate 10 Years of The Nest than to curate and cook for his favorite event, with his favorite people (you)! So come celebrate this new season of our Chef Series on July 19th.
